Enogastronomia e cultura, due facce della stessa medaglia


Il giorno 12 Aprile 2018, in occasione del progetto di Alternanza Scuola Lavoro ‘IL TURISMO DEL FUTURO: STOSTENIBILE, RESPONSABILE, ESPERIENZIALE”, le classi IV e V Turismo dell’ITS "G. Filangieri" di Trebisacce hanno incontrato il Professor Luigi Blotta, esperto di enogastronomia e docente presso l'Istituto Professionale di Stato per i Servizi Alberghieri e della Ristorazione "K. Wojtyla" di Castrovillari.
Durante l’intervento il professore ha messo in risalto l’importanza del cibo e la sua  relazione con la cultura del territorio, soffermandosi su diversi punti, invogliando i ragazzi all’ascolto e stimolando la loro curiosità e il desiderio di apprendere nuove conoscenze. Durante l’incontro, il professore ha sottolineato il rapporto tra beni culturali, enogastronomia e turismo , mettendo in luce una rete di collaborazione: “il turista è alla ricerca del cibo locale da abbinare alla cultura del luogo”.


Il professor  Blotta ha fatto fare ai partecipanti un tuffo nel passato, illustrando l'evoluzione della gastronomia nel tempo e nello spazio, partendo dalla cucina degli Egiziani, attraverso la cucina medievale, quella rinascimentale,  per giungere fino ai giorni nostri. La storia ci insegna che tutto evolve, tutto cambia e si modifica con il tempo, il cibo rappresenta, senza ombra di dubbio, uno dei settori più attivi in questo senso, in quanto soggetto a evoluzioni e contaminazioni in base a  luoghi, popoli, epoche, stagioni e circostanze di varia natura.
Per rendere ancora più coinvolgente l’incontro il professore, dopo la sua relazione e gli interventi degli studenti, ha allestito un laboratorio del gusto, presentando due piatti da degustare ed analizzare. Il "Libum", la prima preparazione testata,  è una sorta di piccola focaccia alla ricotta stesa su un letto di foglie di alloro, la cui ricetta risale all'antica Roma; la ‘Riganata’ è una golosissima torta a forma di spirale, simbolo di rinascita, formata da una sottile sfoglia di farina, lievito, olio e zucchero e da una farcitura di uvetta e origano, arrivata sulle coste della Calabria in tempi lontani, grazie alla comunità arbëreshë.
In occasione di questa degustazione, Blotta ha consegnato ai ragazzi delle schede da compilare con l'indicazione delle caratteristiche organolettiche delle preparazioni testate, in base ai sensi della vista, del tatto, dell’olfatto e del gusto.  Infine, gli studenti hanno espresso una valutazione complessiva sui due prodotti.
I ragazzi hanno manifestato notevole interesse per l'iniziativa, ed hanno apprezzato la disponibilità, le competenze e la professionalità dell'esperto. 






Oenogastronomie et culture: deux faces de la même médaille

Le jour 12 Avril 2018, au cours du projet d'alternance école-travail " LE TOURISME DU FUTUR: DURABLE, RESPONSABLE ET EXPERIENTIEL", les classes IV et V de l'Institut Technique Touristique "G. Filangieri" de Trebisacce ont rencontré le Professeur Luigi Blotta , spécialiste d' œnogastronomie et professeur à l'Institut professionnel d'état pour les Services Hôteliers et de la Restauration "K. Wojtyla" de Castrovillari.  Dans sa relation le professeur a mis en évidence l'importance de la nourriture et son lien  avec la culture du territoire, il a abordé différents sujets,  en incitant les élèves à écouter et en stimulant leur curiosité et le désir d'acquérir de nouvelles connaissances. Pendant la conférence le spécialiste a souligné le rapport entre biens culturels, œnogastronomie et tourisme, en illustrant un réseau de coopérations et relations: " le touriste est à la recherche des plats locaux liés à  la culture du lieu".
Les participants ont fait un saut dans le passé, car le professeur Blotta leur a expliqué l’évolution de la gastronomie dans le temps et dans l’espace, à partir de la cuisine égyptienne, en passant par la cuisine médiévale, celle de la Renaissance, pour arriver jusqu’à nos jours. L’histoire nous enseigne que tout évolue, tout change et se transforme avec le temps et la nourriture représente, sans aucun doute, l'un des secteurs les plus actifs, puisqu'elle est sujette à des évolutions et des contaminations sur la base de lieux, peuples, époques, saisons et circonstances de différente nature.  Pour rendre encore plus captivante la conférence le professeur, après sa relation et les interventions des élèves, a mis en place un laboratoire du goût, en présentant deux plats à déguster et analyser. Le « Libum », la première préparation testée, c’est une sorte de petite tartines à la ricotta étendue sur un lit de feuilles de laurier, dont la recette remonte à l'époque romaine; la « Riganata » c’est une gâteau en forme de spirale, symbole de renaissance, composée de une subtile pâte feuilletée de farine, levure, huile et sucre et d’une garniture de raisin et origan, arrivée autrefois sur les côtes de Calabre, grâce à la communauté arbëreshë.
A l'occasion de cette dégustation, Blotta a remis aux jeunes des fiches à remplir avec l'indication des caractéristiques organoleptiques des préparations testées, sur la base des sens de la vue, du toucher, de l'odorat et du goût. Enfin, les étudiants ont exprimé une évaluation  sur les deux produits. Les élèves ont manifesté un intérêt considérable pour l'initiative, et ils ont apprécié la disponibilité et les compétences de haut niveau du professionnel.

On April 12, 2018, during the project of ALTERNANZA SCUOLA LAVORO “The tourism of the future: sustainable, responsible, experiential”, the IV and V Tourism classes of ITS" G. Filangieri " of Trebisacce met Luigi Blotta, expert in food and wine as well as teacher at the Professional Institute of State for Hotel Services and Catering "K. Wojtyla" of Castrovillari.
During the speech the professor highlighted the importance of oenogastronomy and its relation with the culture of the territory, focusing on different points, encouraging the guys to listen and stimulating their curiosity and their desire to improve their knowledge. During the meeting, the professor emphasized the relation between cultural heritage, food and wine and tourism, highlighting a network of collaboration: "the tourist is looking for local food to combine it with the culture of the place".
Professor Blotta made the participants take a dip in the past, illustrating the evolution of gastronomy over time and space, starting from the cuisine of the Egyptians, through the medieval and Renaissance cuisine, up to the present day. History teaches us that everything evolves, everything changes and changes with time, the food represents, without a shadow of doubt, one of the most active sectors in this sense, as subject to evolution and contamination based on places, people, epochs , seasons and circumstances of various kinds.
To make the meeting even more challenging, professor Blotta, after his report and the students' interventions, set up a taste laboratory, presenting two dishes to be tasted and analyzed. The "Libum", the first preparation tested, is a kind of small ricotta focaccia spread on a bed of bay leaves, whose recipe dates back to ancient Rome; the 'Riganata' is a delicious cake in the shape of a spiral, symbol of rebirth, made by a thin sheet of flour, yeast, oil and sugar and a filling of raisins and origano, which arrived on the coasts of Calabria in ancient times, thanks to the arbëreshë community.
After the tasting, Blotta gave the guys some forms to fill in with an indication of the organoleptic characteristics of the tested preparations, based on the senses of sight, touch, smell and taste. Finally, the students expressed an overall assessment of the two products.
The students have shown considerable interest in the initiative, and have appreciated the availability, skills and professionalism of the expert.

Il 22.03.2018 le classi IV e V Turismo del ITS G.Filangieri di Trebisacce hanno partecipato ad una uscita didattica nel territorio del Parco Nazionale del Pollino. Dopo una piacevole sosta a Campotenese completamente innevato, ci si è diretti verso la Chiesa di San Bernardino a Morano dove una guida esperta ha accolto gli studenti e ha illustrato loro le caratteristiche del complesso monastico. La meta seguente è stata Castrovillari; all’Ente Parco del Pollino il funzionario Carmelo Pizzuti ha interloquito con i ragazzi sul turismo sostenibile e ha mostrato del materiale multimediale sulla la regione e il territorio del Pollino. In seguito, nella stessa sede, si è tenuto un colloquio con i volontari della Proloco di Castrovillari che hanno fornito alcune informazioni sulle attività svolte e promosse dall’ente in cui operano. Gli studenti, le insegnanti e la guida sono stati, poi, accolti al Protos Caffè dove hanno fatto una pausa pranzo ed, infine, hanno visitato, all’interno del Protoconvento Francescano, il Museo Archeologico e la Pinacoteca “Andrea Alfano”, illustre artista locale.
Giornata piacevole, intensa e ricca di incontri e di esperienze: una nuova finestra sul mondo.

Le 22.03.2018 les classes IV et V Tourisme de l’ITS « G.Filangieri » de Trebisacce ont participé à une visite didactique dans le territoire du Parc National du Pollino. Après un arrêt agréable à Campotenese complètement enneigé, on s’est dirigé vers l’église de Saint Bernardino à Morano où un guide expérimenté a accueilli les étudiants et il leur a illustré les caractéristiques du complexe monastique.
La destination suivante a été Castrovillari. A l'Association Parc du Pollino le fonctionnaire Carmelo Pizzuti a parlé avec les jeunes à propos du tourisme durable et leur a montré du matériel multimédia sur la région et le territoire du Pollino. Ensuite, sur place, s'est tenu un entretien avec des volontaires de la Proloco de Castrovillari qui ont fourni des informations sur les activités réalisées et promues par l'établissement dans lequel ils opèrent. Puis, les étudiants, les professeurs et le guide ont été accueillis au Protos Café où ils ont fait une pause-repas, et, enfin, ils ont visité à l'intérieur du Protoconvento Francescano , le musée archéologique et la Pinacothèque "Andrea Alfano", célèbre artiste local.
Journée agréable, intense et riche de rencontres et d'expériences: une nouvelle fenêtre sur le monde.

On 22.03.2018 the IV and V Tourism of the ITS G.Filangieri of Trebisacce took part to a didactic outing in the territory of the Pollino National Park. After a pleasant stop in Campotenese completely covered in snow, we returned to the Church of San Bernardino in Morano, where an expert guide welcomed the students and illustrated the characteristics of the monastic complex. The following locality visited was Castrovillari; The students went to the "Ente of Pollino" where the main expert Carmelo Pizzuti introduced sustainable tourism and showed the multimedial material about the region and the territory of Pollino. Later, at the same venue, an interview was held with the volunteers of Proloco di Castrovillari who provided some information on the activities carried out and promoted by the company in which they work. The classes, the teachers and the guide were then welcomed at the Protos Caffè where they had a lunch break. In the end, they visited the Museo Archeologico and the gallery "Andrea Alfano”, an illustrious local artist, inside the Franciscan Protoconvento.
It was a pleasant day, intense and full of meetings and experiences: a new window into the world.

CASTROVILLARI

·       Protoconvento Francescano
E' stato il primo convento francescano costruito in Calabria, realizzato nel 1221 dal Beato Pietro Cathin, discepolo e compagno di San Francesco d' Assisi. Fu ospedale militare prima e caserma poi, la vecchia chiesa all' interno fu trasformata in teatro è sede del rinato Teatro Sybaris, del Museo civico archeologico, della Pinacoteca comunale di Andrea Alfano.

·         Franciscan protoconvent

It  was the first Franciscan convent built in Calabria, made in 1221 by Pietro Cathin the Blessed, disciple and friend of Saint Francis of Assisi. It was at first a military hospital and then a  jail. The old church situated inside it,  was transformed into a theatre and it houses the famous Sybaris Theatre, the Archeological Civic Museum, and Hall Gallery of Andrea Alfano.

Andrea Alfano è un artista locale, scultore, pittore illustre e autore di poesie.

La Pinacoteca raccoglie più di 300 opere tra dipinti, disegni e sculture, dalle prime prove dell'artista di fine '800 agli ultimi dipinti di metà ''900. Alla città natale Alfano lasciò i quadri originariamente esposti nel suo studio.

Andrea Alfano was a local artist, sculptor, famous painter and poet.
The Gallery collects more than 300 works including paintings, drawings and sculptures, from the first trials in the late 19th century  to the last paintings of the mid-20th century. In his hometown Alfano left the paintings at the beginning, showed in his studio.

Il Museo custodisce il patrimonio archeologico del territorio di Castrovillari e del suo circondario dalle epoche preistoriche fino all'alto medioevo; esso documenta la storia di quella interessantissima area che va dalla Sibaritide al Pollino.
